Tandoori pec je určena na úpravu pokrmů bez tuku za velkého žáru a vysokých teplot. Vysoká teplota se udržuje pomocí uhlí, které obklopuje spodní část konstrukce. Jedině tak je možné dosáhnout teploty blížící se 480°C. Obsluha pece musí dbát hlavně na to, aby uhlíky hořely po celou dobu. Při těchto vysokých teplotách vytvoří většina potravin v této peci tvrdou vnější vrstvu, aniž by byla obětována vlhkost uvnitř.
